Healthy Spiced Pumpkin Bread

The official first day of fall is almost here and I am ready for all the fall recipes to go down in my kitchen. Pumpkin bread always seems like a good place to start when it comes to fall baking and I realized that I had never shared my go-to recipe that is healthy and delicious. (That obviously has to change right?) Pumpkin bread is one of those things that I look forward to every year and there is nothing better than the smell of warm spices baking in your oven! Aside from the perks of having your house smell like your favorite fall candle, but way better, I also like making my own pumpkin bread at home because I get to make a healthier version of my favorite fall bread. Healthier Chocolate Zucchini Donuts

My kiddo happens to be a donut lover. It’s the one thing he can’t resist and asks for whenever we are out and about and they are available. Of course the occasional donut indulgence is fine, but when you can make your own at home and the ingredients are all good ones, you don’t have to feel bad about serving them up to your kids any day of the week! With the end of summer approaching at a rapid pace, I find that everyone I know has a ton of zucchini in their fridge and I know I am always looking for recipes to use up my zucchini in new ways! My healthier chocolate zucchini donuts are perfect for a healthy and fun breakfast and they happen to be loaded with all the good stuff!

Easy Chia Pudding, Three Ways

With back to school starting for some this week, easy breakfasts that can be prepped in advance are essential for getting out of the door on time! I love to have ready to eat breakfasts in the fridge for the whole family because I have a kid who wakes up hungry and a hubby who takes his breakfast to go! Some days I get tired of overnight oats and eggs so switching it up to keep things interesting is key! Chia pudding is one of those breakfast that I tend to forget about and then when I remember, I go through a chia pudding phase where I can’t get enough! Currently I’m in that phase, and because it’s so easy, I created easy chia pudding (three ways) so that you can set yourself up for success in the mornings!

Whole Wheat Cherry Almond Streusel Muffins

July has been a whirlwind of a month between going on vacation, lots of work happenings, and getting the worst summer cold last week. Sleep schedules have been off, diets have been off, and honestly I am ready to get back to some routine around here as we get ready for back to school in a couple of weeks. I cannot believe that the summer is over and we are already prepping for everything back to school! Where did the summer go? One of the ways I always try to get ready for school is to prep easy breakfasts and snacks because mornings are rushed and after school kids are hangry and need something to eat as soon as they get home! Muffins are one of those things that I like to make it advance and keep in the freezer to pull out whenever I need them most! My whole wheat cherry almond streusel muffins are perfect for meal prepping and more and you are going to love this recipe guaranteed!
