Whole Wheat Rosemary Crust Tomato Galette: My Diary of Us

Whole Wheat Rosemary Crust Tomato Galette

TGIF.  Am I right?  I'm pretty excited about tonight because we are carving pumpkins with Canean's sisters.  We are going to eat chili, drink pomegranate sangria, and pretend we are ten again, well except for the cocktail part.  The nights have been slightly chilly this week which is going to make for a perfect fall night.  I love when Friday nights start the weekend off with a bang and kind of set the momentum for Saturday and Sunday.  And another requirement for a great weekend is a great breakfast or brunch at some point.  This easy whole wheat rosemary crust tomato galette is perfect for just that!

If you are a lazy baker like me, then galettes are right up your alley.  Imperfection is what makes these great, it's kind of necessary in fact.  You don't need perfect edges, there is no refrigerating overnight.  You can throw whatever ingredients on top of the simple dough, which can be made in the food processor, and you have yourself an easy breakfast, brunch, or lunch!

Rosemary Honey Sweet Potato Hash: My Diary of Us

Rosemary Honey Sweet Potato Hash

I could maybe eat breakfast for every meal of the day.  I love sweet, I love savory, and I really love when I get a little bit of both.  I'm not one of those people who's always is in the mood for salty or always sweet...I could do either and for the most part it just depends on the day.  Also, I love potatoes...all of 'em.  Yellow, purple, sweet, red, white, golden...whatever give them all to me.  I am most definitely a "I'll take a side of hash browns with my breakfast" kind of gal.  Which is why I love a good hash.  Hashes like this rosemary honey sweet potato hash make the world go round.

When you start your day off with a hash and then top it with a fried egg you are guaranteed to have a fantastic day.  You get the perfect balance of carbs, protein, and it is packed full of mouth watering flavor in every bite.

Skinny Banana and Chocolate Chip Muffins: My Diary of Us

Skinny Banana and Dark Chocolate Chip Muffins

Let's be honest here.  If you saw my Instagram feed from the weekend, you know I could really use a skinny muffin in my life.  I made cookies, my brother came over and cooked delicious ribs, I made ice cream sandwiches, and then topped it off with a decadent French toast casserole yesterday morning.  Let's not count the calories, let's just get back on track this week.  Monday's allow for fresh starts and I'm on board with that when they include yummy, skinny banana dark chocolate chip muffins.

These muffins actually aren't my recipe, they are from Ambitious Kitchen.  I saw them last week and decided to give them a go.  I am sharing them with you because I think you deserve to know that there is this delicious and healthy muffin waiting to be made to start your day off right!  And you know what?  They would be fantastic as a healthy afternoon pick me up...

Whole Wheat Drop Biscuits with Molasses Butter Glaze: My Diary of Us

Whole Wheat Drop Biscuits with Molasses Butter Glaze

Last week my mom was here and she started telling me about when she was a little girl, every Sunday they went to her grandmother's house and ate homemade biscuits with molasses butter.  (Yes please, I'll have some right now.)  I am still not sure why this tradition never carried on into my childhood, seems like one you would want to keep around if you ask me.   I had a hard time getting over the fact that I missed out on such deliciousness my whole life as she went on and on about how amazing the biscuits were.  By this time there was no turning back, I had to make some for myself.  Whole wheat drop biscuits with molasses butter glaze should be everyone's Sunday tradition if you ask me.

This is for all of you lazy baker's out there (talking to myself here).  You know for those times when you get a baking whim and don't have the time to knead, let rise, or roll out anything.

Breakfast Tacos with Andouille Sausage and Queso Fresco: My Diary of Us

Breakfast Tacos with Andouille Sausage and Queso Fresco

School has started, so I am guessing that your weeks have just gotten that much more complicated and hectic.  Even if you don't have kids to get to school in the morning, traffic has increased and your morning time has in turned decreased, which can sometimes mean that breakfast gets eliminated or you might tend to grab something unhealthy.  Make ahead breakfasts can be life savors for the morning rush and my breakfast tacos with Andouille sausage and queso fresco are the perfect solution to a happy belly.

You can prep all ingredients the night before and in the morning have a fresh and satisfying breakfast on your plate in under a minute.  I don't know if you are like me, but if I don't have a good breakfast, I am not very productive and can get kind of hangry.  No bueno friends.

I picked up some local Andouille sausage from the farmer's market on Saturday, and I knew right away breakfast tacos were going to be on the menu for the week.  The prep is easy, and it's everything that I love about breakfast.  Fluffy eggs, spicy sausage, fresh pico, creamy avocado, and crumbled queso fresco...it's perfection wrapped up in a soft tortilla.

You can swap any ingredients for ones that you prefer or have in the fridge and stuff those bad boys with whatever makes your taste buds dance.

They will quickly become a family favorite and you will love the extra minutes you have in the morning and the fact of knowing that you fed your body what it needs to get through the day!

whole wheat ricotta waffles.jpg

Sunday Morning Ricotta Whole Wheat Waffles

In our house Sunday mornings mean waffles.  If I ask Canean what he wants for breakfast on the weekends, nine times out of ten he will say waffles.  So, needless to say I am always trying out new recipes and I usually try and make them somewhat healthy so I don't feel like I'm undoing my week's hard work.  These ricotta whole wheat waffles are my new favorite!

Is there anything better than a lazy weekend morning?  You know the times where neither you or your partner have to be anywhere early and can spend the morning together drinking coffee and eating breakfast, chit chatting about this and that.  It's the best.  And waffles just make it better if you ask me.

I combined Canean's waffle obsession with my ricotta cheese obsession (as you know another favorite breakfast of mine is Ricotta Breakfast Toast), and ended up with a pretty great waffle!  The ricotta cheese adds a nice texture, flavor, and also adds an extra dose of protein to help you stay full!  To top the waffles, I used fresh berries and drizzled maple syrup over top.

Deelliisshhh guys! You must try them the next time you are in a waffly mood!
