I love making fries at home because I can bake them right up and don’t have to feel guilty about eating half the pan. Summer is in full swing and so is the heat! That means I am all about an easy meal that I barely have to cook. Ceviche is one of those dishes that I tend to make in the summer more often than not because it just begs to be eaten on a warm afternoon with a cold beer outside on a patio, or if you are lucky, maybe on the beach! There are all sorts of ceviche varieties, but we love this shrimp ceviche because we always have access to fresh wild caught shrimp since we are close to the Gulf. Easy Buffalo Chicken Lettuce Wraps

Buffalo chicken is one of those dishes that I get a craving for on a regular basis. I love traditional buffalo wings, but I also love making my roasted buffalo cauliflower and more to satisfy the craving when the craving hits that are a bit lighter. With the Super Bowl coming up, I love the idea of making healthier options to serve to my guests in addition to some more traditional game day foods! Lettuce wraps are one of those things that you can literally put anything inside of to make a lighter option of one of your favorites. Most people think of Asian lettuce wraps only, but truly the options are endless. My easy buffalo chicken lettuce wraps are so satisfying, they make such a great appetizer for game day, and they truly couldn’t be any easier to whip up any day of the week!
