Three Easy Dinners for Back to School

Three Ways to Roast a Chicken

Raise your hand if you cook chicken at least once a week?  (Me!)  I am raising my own hand because we have chicken on the regular at our house.  I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different!  This always usually means leftovers are an option and I can turn them into a whole other meal!  Talk about cost effective!  The problem with chicken is that I can get burnt out on it and I'm sure you do too!  I'm sharing three different ways to roast a chicken that will keep you and your family from getting bored with chicken from week to week!

Sloppy Joe Stuffed Peppers

Happy Monday!  How was your Easter weekend?  We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together!  Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him!  So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track!  My sloppy joe stuffed peppers are just the kind of meal that is super satisfying while being low carb and healthy at the same time!

Healthy Sweet and Sour Grilled Chicken Quinoa Bowls

Y'allll...easy weeknight dinners are something that I cannot live without.  They have to be ready in under thirty and have to be easy enough to be cooked with a toddler distracting me at every turn.  Yesterday, for instance as I was making this very dish on Instagram Live, mid-video I had to run outside and chase Parks down the side of the house because he had escaped outside.  He also proceeded to try and dump a large amount of salt into my pan, needed a new snack every second, and needed to make sure his voice was heard talking over me every chance he got!  Days like yesterday (most days) can be a little stressful when all I want to do is get dinner on the table.  Enter Healthy Sweet and Sour Grilled Chicken Quinoa Bowls...

Slow Cooker Beef Banh Mi Tacos

We've been on a taco kick lately.  Tacos for breakfast, tacos for lunch, and tacos for dinner.  Matter of fact, we are having tacos for dinner tonight too!  I can't get enough of creating different flavor combinations to throw into a taco shell and call it a day.  For a while now I have been making banh mi bowls for dinner and my guys go crazy over them.  I got to thinking, wouldn't these be amazing in taco form too?  Why yes, yes they would...and they are!  My slow cooker beef banh mi tacos are just the easy weeknight meal that you have been waiting for to spice up your weekly meal routine!

30 Minute Gluten Free Cilantro Pesto Chicken Pasta

Monday whipped my booty y'all.  I am not going to lie, it was a little rough.  I didn't sit down until well after 7:00pm (but for real) and then when I attempted to take a bath, my toddler hijacked it.  Like straight up, "mommy Parks take bath too."  And I mean of course I couldn't tell him no, so I took a cold bath and he swam in a sea of bubbles and was the happiest kid on the block.  Which, in turn made me the happiest mama on the block too, but man I had been looking forward to that bath.  When I put him to bed, I yawned really big and he said "Mommy sleepy"...yes buddy mama was super sleepy last night.  I totally get it now why my mom would fall asleep as soon as she would sit down my whole life!  This mom stuff is no joke!  So while we are on the topic of days where you literally don't have energy to think about dinner, let me help you out!  My 30 minute gluten free cilantro pesto chicken pasta is a cinch to make on any day of the week, (even the exhausting ones.)
