Easy Cajun Paella

Paella is traditionally a Spanish rice dish that is made with meats and seafood all cooked up in the same skillet that is full of flavor. I created my own twist on the traditional version and created a Cajun version that has all of the same components that makes you fall in love with a Cajun flare that is so delicious. I partnered with my friends at Tony Chachere’s to create this delicious Cajun Paella that is made with andouille sausage, chicken thighs, seafood, and their Creole Spanish Rice Dinner Mix that makes this recipe extra easy to whip up! Easy Shrimp Ceviche

Summer is in full swing and so is the heat! That means I am all about an easy meal that I barely have to cook. Ceviche is one of those dishes that I tend to make in the summer more often than not because it just begs to be eaten on a warm afternoon with a cold beer outside on a patio, or if you are lucky, maybe on the beach! There are all sorts of ceviche varieties, but we love this shrimp ceviche because we always have access to fresh wild caught shrimp since we are close to the Gulf. This recipe for easy shrimp ceviche is a great one to try if you have never made your own at home, and I just know you are going to love it as much as we do.

Low Country Boil Skewers

We only have a few more weeks of summer and I have mixed feelings about it all. I mean let’s be honest, in Texas we have about three more months of summer weather, but with every new season there is a shift. I am hanging on to low key dinner nights, grilling in the backyard, sounds of water splashing in the kiddie pool behind me, and not having too much of an agenda. So that’s what we are going do for these last weeks of summer. Let’s savor it all with a fun twist on a classic recipe that I grew up eating. Low country boils are popular in the south and are typically served up on a warm summer day spread out on newspapers and enjoyed with cold beers. But because not everyone has a ginormous pot hanging around and an outside burner, I am taking those same nostalgic flavors and making them easy enough for anyone to whip up any night of the week. This recipe for low country boil skewers is going to be your new favorite grilling recipe and you are going to love just how easy they are to make.
