Key Lime Poppy Seed Muffins

Hello March! I am welcoming a new month with open arms and some delicious muffins that are giving me all the Spring feels! I forgot how much I enjoy a poppy seed muffin until I was playing around with this recipe and ended up creating the most delicious muffin! Typically you see lemon with poppy seed in a recipe, but I am here to tell you that key limes are an amazing substitute for the traditional lemon flavor! Key limes are a bit more tart than a traditional lime and are so fun to use in recipes, not to mention they are adorable too! I love baking a batch of muffins for the week for easy breakfasts and snacks and these do not disappoint. While I am traditionally more of a blueberry or chocolate chip muffin kind of gal, these muffins just might have converted me. My key lime poppy seed muffins are definitely one to add into your muffin rotation and I can guarantee your whole family will approve!

Whole Wheat Cherry Almond Streusel Muffins

July has been a whirlwind of a month between going on vacation, lots of work happenings, and getting the worst summer cold last week. Sleep schedules have been off, diets have been off, and honestly I am ready to get back to some routine around here as we get ready for back to school in a couple of weeks. I cannot believe that the summer is over and we are already prepping for everything back to school! Where did the summer go? One of the ways I always try to get ready for school is to prep easy breakfasts and snacks because mornings are rushed and after school kids are hangry and need something to eat as soon as they get home! Muffins are one of those things that I like to make it advance and keep in the freezer to pull out whenever I need them most! My whole wheat cherry almond streusel muffins are perfect for meal prepping and more and you are going to love this recipe guaranteed!

Healthier Chocolate Chunk Banana Muffins

Happy Monday! Over the weekend one of the ways I like to meal prep is by making a big batch of muffins that I can keep in the fridge or freezer for easy breakfasts and lunch box additions all week long! I find that everyone is always happy when freshly baked muffins are available and even better if they are somewhat healthy too! I happened to find myself with some really ripe bananas last week and knew they were meant to become banana muffins! I wanted to take them up a notch by adding some dark chocolate chunks to make them extra special and delicious! My healthier chocolate chunk banana muffins are just the special treat that your weeks needs and the good news is they are super simple to make too!

Skinny Banana and Dark Chocolate Chip Muffins

Let's be honest here.  If you saw my Instagram feed from the weekend, you know I could really use a skinny muffin in my life.  I made cookies, my brother came over and cooked delicious ribs, I made ice cream sandwiches, and then topped it off with a decadent French toast casserole yesterday morning.  Let's not count the calories, let's just get back on track this week.  Monday's allow for fresh starts and I'm on board with that when they include yummy, skinny banana dark chocolate chip muffins.

These muffins actually aren't my recipe, they are from Ambitious Kitchen.  I saw them last week and decided to give them a go.  I am sharing them with you because I think you deserve to know that there is this delicious and healthy muffin waiting to be made to start your day off right!  And you know what?  They would be fantastic as a healthy afternoon pick me up...
