Spicy Roasted Broccoli

Yesterday was my first day back on the health train.  Over the holidays I completely abandoned any sense of trying to watch what I eat.  I thought it was appropriate to eat sugar everyday sometimes even at breakfast and working out...what's that?  I had a reality check yesterday and gave myself a little pep talk about how that kind of behavior cannot continue into 2015.  After all, I'll be 31 next month and my metabolism isn't what it used to be!  I planned out meals for the week, exercised (ouch), and drank tons of citrus detox water, which will be on the blog Thursday!  This morning I woke up feeling ten times better from just one day of eating fresh!  Spicy roasted broccoli is one of my favorite go to healthy side dishes because it's full of nutrients, so tasty, and it might be the easiest dish to make, maybe ever.

When dinner rolls around you've been to work, possibly starting working out again, and by now it's pitch dark and the last thing you want to do is prep a big meal.  You need simple, you need fresh, it needs to taste good, and you need as few ingredients as possible.

Old Bay Fries with Bloody Mary Ketchup

In New York my friend Sarah took us to a place called Shorty's where they have really good cheese steaks and the bread is from Philly making them super authentic.  We definitely went for the sandwiches, and not that my sandwich wasn't delicious, because it was, but what I really fell in love with were the fries.  Old Bay fries to be exact.  I love Old Bay so I am not sure why it has never occurred to me before to sprinkle some on my fries.  So that's what I did this week I made you a healthier baked version of Old Bay fries and kicked it up a notch with some Bloody Mary ketchup!

Sooo, I'm thinking brunch.  Fried eggs on top, runny yokes...the whole bit, maybe some green onions sliced on top of that... You feeling me yet?

Caprese Macaroni and Cheese

It's Friday and all I want to do tonight is watch a movie in my pj's with Canean.  We haven't really seen each other very much this week and I have been looking forward to the weekend since Monday for that very reason.  But of course we also have to eat and what I'm really craving is some comfort food to eat while I have my stretchy pants on.  Sexy I know.  My caprese macaroni and cheese is maybe my new favorite comfort food and way to eat mac n cheese.  It has pesto and roasted tomatoes in it and I have somehow convinced myself that it is kind of healthy...

I mean, it's basically grown up mac n cheese (but your kids will love it too) and you are probably going to want to make it this weekend at some point.  I am secretly hoping for a thunderstorm to roll in just about the time we settle in for the night while we stuff our faces with cheesy pasta and drink red wine. 

Sometimes a girl wants to get dressed up and go out on the town, and other nights we just want our pajamas, some snuggly pups, our best guy, and a big bowl of cheesy pasta.

Tonight I'm feeling option two.  But even if you are making up for my lack of a Friday night, which I hope you are, you will still need this mac n cheese to be part of your life sooner rather than later.

I promise you will want to eat ALL of it. (Hence the need for stretchy pants.)
