Pork carnitas are one of my favorite slow cooker recipes. You will find fewer recipes that have a simpler prep with the end result being more delicious than you can imagine. The pork is so flavorful and stays nice and tender from being cooked low and slow and then gets finished by broiling the meat in the oven after it’s been shredded to create crispy edges on the meat that are irresistible. These slow cooker pork carnitas will quickly become one of your favorite weeknight dinners.

Whole Wheat Rosemary Crust Tomato Galette

TGIF.  Am I right?  I'm pretty excited about tonight because we are carving pumpkins with Canean's sisters.  We are going to eat chili, drink pomegranate sangria, and pretend we are ten again, well except for the cocktail part.  The nights have been slightly chilly this week which is going to make for a perfect fall night.  I love when Friday nights start the weekend off with a bang and kind of set the momentum for Saturday and Sunday.  And another requirement for a great weekend is a great breakfast or brunch at some point.  This easy whole wheat rosemary crust tomato galette is perfect for just that!

If you are a lazy baker like me, then galettes are right up your alley.  Imperfection is what makes these great, it's kind of necessary in fact.  You don't need perfect edges, there is no refrigerating overnight.  You can throw whatever ingredients on top of the simple dough, which can be made in the food processor, and you have yourself an easy breakfast, brunch, or lunch!

White Bean Chicken Chili

Healthy White Bean Chicken Chili

Do you need a one pot meal in your life like I did this week?  Between building twelve wooden tables, Canean going out of town, and my dad coming in town, a one pot meal was a life saver this week.  Since it's fall technically, even though the Louisiana weather refuses to admit it, I made one of my favorites.  Healthy white bean and chicken chili is one of my favorite go-to weeknight meals in the fall because it's easy and really, really good.

Sometimes I have time for elaborate meals that have lots of steps and require lots of love.  And sometimes, I just need a yummy and healthy meal that I can feel good about eating that will be ready in no time and requires little effort.

Whole Wheat Drop Biscuits with Molasses Butter Glaze

Last week my mom was here and she started telling me about when she was a little girl, every Sunday they went to her grandmother's house and ate homemade biscuits with molasses butter.  (Yes please, I'll have some right now.)  I am still not sure why this tradition never carried on into my childhood, seems like one you would want to keep around if you ask me.   I had a hard time getting over the fact that I missed out on such deliciousness my whole life as she went on and on about how amazing the biscuits were.  By this time there was no turning back, I had to make some for myself.  Whole wheat drop biscuits with molasses butter glaze should be everyone's Sunday tradition if you ask me.

This is for all of you lazy baker's out there (talking to myself here).  You know for those times when you get a baking whim and don't have the time to knead, let rise, or roll out anything.

Pantry Essentials

It's been a long day, the last thing you want to do is go to the store on your way home from work, the only problem is you and your family have to eat something.  Resist the urge, don't stop and get takeout.  Just keep my favorite pantry essentials stocked in your kitchen and you will be able to whip up a meal in no time with just a few ingredients.

The key to keeping yourself on track and eating healthy is to have the food in your house available whenever you need it.  Most of the items that I keep stocked are either non-perishable or can last in your fridge/freezer for a couple of weeks.  These items obviously are just a few of my favorite, but you can tweak them to your family's liking.

Mini Cadbury Egg Vanilla Ice Cream and Double Chocolate Chip Cookie Ice Cream Sandwiches

Every year Easter time rolls around and every year I find myself with Mini Cadbury Eggs stocked in my freezer.  Because that's how I like to eat my chocolate, right out of the freezer.  I have no idea what goes into these tiny little pastel candy coated eggs filled with the most delicious milk chocolate, but whatever it is it's addicting and delicious. 

I got to thinking since I like my Cadbury eggs out of the freezer, why not make some ice cream and add them to the mix?   I also happen to love ice cream sandwiches, so why not sandwich the ice cream right between two double chocolate chip cookies with a little sea salt on top (because we have to balance the sweet right?) 

So it happened, Mini Cadbury Egg Vanilla Ice Cream and Double Chocolate Chip Cookie Ice Cream Sandwiches were made!

I mean it really might be my best ice cream sandwich yet!  The ice cream is smooth with bits of crunchy mini eggs and then you have the chewy cookie on top and bottom and holy cow...it's out of this world.  And listen I am usually a dark chocolate girl any day of the week, but not with Cadbury Mini Eggs...give me the milk chocolate any day. 

You like how I tend to use holidays as an excuse for making something not so healthy for me?  You are probably starting to realize that every holiday big or small I somehow manage to squeeze a sweet treat in the mix.  I like to think that the calories don't do as much damage if you are eating them to celebrate something special. 

Why should Easter be any different?  These ice cream sandwiches would be the perfect grand finale to your Easter dinner spread guaranteed to please all of your friends and family!
