Whole Wheat Rosemary Crust Tomato Galette

TGIF.  Am I right?  I'm pretty excited about tonight because we are carving pumpkins with Canean's sisters.  We are going to eat chili, drink pomegranate sangria, and pretend we are ten again, well except for the cocktail part.  The nights have been slightly chilly this week which is going to make for a perfect fall night.  I love when Friday nights start the weekend off with a bang and kind of set the momentum for Saturday and Sunday.  And another requirement for a great weekend is a great breakfast or brunch at some point.  This easy whole wheat rosemary crust tomato galette is perfect for just that!

If you are a lazy baker like me, then galettes are right up your alley.  Imperfection is what makes these great, it's kind of necessary in fact.  You don't need perfect edges, there is no refrigerating overnight.  You can throw whatever ingredients on top of the simple dough, which can be made in the food processor, and you have yourself an easy breakfast, brunch, or lunch!

Rosemary Honey Sweet Potato Hash

I could maybe eat breakfast for every meal of the day.  I love sweet, I love savory, and I really love when I get a little bit of both.  I'm not one of those people who's always is in the mood for salty or always sweet...I could do either and for the most part it just depends on the day.  Also, I love potatoes...all of 'em.  Yellow, purple, sweet, red, white, golden...whatever give them all to me.  I am most definitely a "I'll take a side of hash browns with my breakfast" kind of gal.  Which is why I love a good hash.  Hashes like this rosemary honey sweet potato hash make the world go round.

When you start your day off with a hash and then top it with a fried egg you are guaranteed to have a fantastic day.  You get the perfect balance of carbs, protein, and it is packed full of mouth watering flavor in every bite.

Shrimp, Andouille, and Okra Stew

It's officially October and I am crossing my fingers that means we are about to get a little heat relief down here in South Louisiana.  I mean, it's October and I'm still sweating on a daily basis but...we are supposed to get somewhat of a cool front over the weekend which will feel amazing.  This girl is ready for chilly nights and some of my favorite fall dishes.  Dinners that stick to your bones and are full of spicy goodness, usually made in one big pot that are even better leftover the next day.  My shrimp, Andouille, and okra stew is just that kind of meal and even though it's been hot I have fixed it twice in the past two weeks because it's just that delicious.

My local farmer's market always has fresh gulf shrimp that are some of the most delicious and fresh shrimp I have had and we have a friend who happens to be a farmer who sells the most delicious pork including his own Andouille sausage.  The vegetables are kind of in their mid-stage between summer and true fall here, but there is a plethora of okra available.  This dish combines all three of the star ingredients in the best way possible.

Crab Cake BLT's: My Diary of Us

Crab Cake BLT's

Ahhhh.  That's me taking a breath.  I know it's Monday, but I am happy about this week being here.  Last week went by in a blur and I don't remember much other than I was on robot mode to get everything done each day.  When life is busy sometimes you need a recipe that can be made into two meals because you just don't have the time or energy to deal with anything else.  These crab cake BLT's are my round two meal from my crab cake with spicy garlic dipping sauce recipe that I posted a couple of weeks ago.

Of course you won't make them weeks apart, and I didn't either, but I am just now getting around to sharing this amazing sandwich with you.  I apologize I didn't get it to you sooner, because it's one hell of a sandwich and you are going to love it.

20-Minute Gnocchi Skillet with Smoked Sausage and Veggies

In high school, I became addicted to the Food Network.  I watched it ALL the time, specifically I loved Rachael Ray and her 30-minute meals and even her sayings that might get on your nerves...I soaked it in.  I grew up cooking with my mom, but I think it was Rachael Ray who taught me to properly chop and got me out of the box as far as cooking and wanting to try new food goes.  There was something about being able to prepare an entire meal from scratch in 30 minutes that kept me watching.  And no wonder, everybody needs a couple of quick meals in their back pocket for nights when you just need to get the food on the table.  My 20-minute gnocchi skillet with smoked sausage and veggies has become my new go-to, fast and delicious meal.

A meal, that I think Ms. Ray herself would be proud of.

Gnocchi are potato dumplings and have the best pillowy texture, and I am a texture person through and through.  I love the fact that like pasta, you can flavor it however you want to and with whatever ingredients are in the fridge.  You boil it for 2-3 minutes and throw it in with the rest of the skillet and voila, dinner is ready.
