Wishing you a Merry Christmas

Hi guys, Merry Christmas!

I am going to be honest here, I am struggling with what to write this morning.  I had this whole plan of writing a normal happy holiday post because as of two days ago that's how I felt.  And then the night before Christmas Eve was a hard one.  I found out some news about a family member that hit me like a train wreck.  

You know when something happens that you think could never possibly happen in your life?  It only happens to other people and in movies, never to you.  Well one of those things is happening currently in my family...

...is this real life?

Cranberry Pistachio Sugar Cookies: My Diary of Us

Cranberry Pistachio Sugar Cookies

I am a sucker for sugar cookies, and even more than that a shortbread cookie.  There is something about the buttery flakiness of them that I cannot resist.  They aren't too sweet and are so light tasting that you don't feel yucky if you happen to "accidentally" eat more than a serving.  Let's be honest, it happens...

 I do realize that I told you that I am not a baker..and that is still a true statement.  However, the holidays give me the baking bug, which means I tend to do most of my baking in the months of November and December.   And this cookie happens to be the perfect treat to make during Christmas time. 

What I love about this particular cookie is the sugar cookie recipe that I use for the base.  It is the perfect cross between a traditional sugar cookie and a shortbread cookie.  Like seriously if they had a baby this cookie would be it.  Yeah...they are pretty amazing.  And then you add the sweet and chewy cranberries and the salty pistachios and whoa...it's ridiculous how good these are! 

It's a simple mix and drop batter, so none of that rolling out business that nobody has time for anyway right now.  When they come out of the oven they are lightly browned around the edges with little bits of red and green popping out making them almost too pretty to eat...almost.

Homemade Doo-Dads

I am going to go ahead and warn you that these are HIGHLY addictive!  I'm sure you have had other homemade chex mix recipes before...and I'm sure they are tasty, but I am not yanking your chain when I tell you that this is the best recipe!  The women in my family have been making this exact recipe for several generations. My homemade doo-dads are going to change your world this holiday season I can promise you and I can't wait for you to give them a try!

 

To this day, the smell of this baking throughout the house is one of my favorite memories growing up at this time of the year.  It's salty, and crunchy, and those bits that get stuck together during the baking process is something that we all fight over in my family!

You are either going to hate me or love me after you make this...or maybe a little of both because you won't be able to stop eating it! 

It's a little time intensive, but really easy!  Great for a Sunday afternoon at home with your family.  The smells that will take over your house will make you oh so happy!
