Whole Wheat Grapefruit Olive Oil Cake

It's Monday...I think it's only fair that we get to eat cake today.  The weekend flew by again and here we are back to reality with the dreaded sound of our alarm clocks.  But if there's cake...that's reason enough to get out of bed don't you think?  Don't worry if you don't have time in your Monday to whip up a cake because with Valentine's Day quickly approaching, my whole wheat grapefruit and olive oil cake would be the perfect addition to your breakfast in bed or Valentine's lunch.  

I say breakfast or lunch because this cake is not overly sweet.  I actually enjoy mine with a cup of coffee in the afternoon for a snack or sometimes for breakfast too.

Whole Wheat Rosemary Crust Tomato Galette

TGIF.  Am I right?  I'm pretty excited about tonight because we are carving pumpkins with Canean's sisters.  We are going to eat chili, drink pomegranate sangria, and pretend we are ten again, well except for the cocktail part.  The nights have been slightly chilly this week which is going to make for a perfect fall night.  I love when Friday nights start the weekend off with a bang and kind of set the momentum for Saturday and Sunday.  And another requirement for a great weekend is a great breakfast or brunch at some point.  This easy whole wheat rosemary crust tomato galette is perfect for just that!

If you are a lazy baker like me, then galettes are right up your alley.  Imperfection is what makes these great, it's kind of necessary in fact.  You don't need perfect edges, there is no refrigerating overnight.  You can throw whatever ingredients on top of the simple dough, which can be made in the food processor, and you have yourself an easy breakfast, brunch, or lunch!

Mini Apple Pies with Spiced Whip Cream: My Diary of Us

Fall Things, Like Apple Pie

I made apple pies on Sunday...mini apple pies.  They are adorable and delicious.  I made them last year for the first time and fell in love.  I have a confession...I never used to like apple pie.  I didn't like the big chunks of apple, but I loved the crust.  True story, my best friend and I still to this day are the perfect pie eating pair.  She loves the filling, I love the crust.  We could polish off one of her grandmother's cushaw pies (similar to pumpkin in taste) by ourselves, two spoons in hand.  It's still one of my favorite memories.  It brings me back to fall in Tennessee which is one of the most beautiful places when fall rolls around.  I love all Fall things, like apple pie...

My mini apple pies have smaller chunks of apple and a good crust layer on top and bottom so they are right up my ally.  This time though, I added some amazing spiced whip cream to the top inspired from Offbeat + Inspired and let me tell ya.  It's a game changer.

Just cover me in whip cream and I'll die happy.

Skinny Banana and Dark Chocolate Chip Muffins

Let's be honest here.  If you saw my Instagram feed from the weekend, you know I could really use a skinny muffin in my life.  I made cookies, my brother came over and cooked delicious ribs, I made ice cream sandwiches, and then topped it off with a decadent French toast casserole yesterday morning.  Let's not count the calories, let's just get back on track this week.  Monday's allow for fresh starts and I'm on board with that when they include yummy, skinny banana dark chocolate chip muffins.

These muffins actually aren't my recipe, they are from Ambitious Kitchen.  I saw them last week and decided to give them a go.  I am sharing them with you because I think you deserve to know that there is this delicious and healthy muffin waiting to be made to start your day off right!  And you know what?  They would be fantastic as a healthy afternoon pick me up...

Whole Wheat Drop Biscuits with Molasses Butter Glaze

Last week my mom was here and she started telling me about when she was a little girl, every Sunday they went to her grandmother's house and ate homemade biscuits with molasses butter.  (Yes please, I'll have some right now.)  I am still not sure why this tradition never carried on into my childhood, seems like one you would want to keep around if you ask me.   I had a hard time getting over the fact that I missed out on such deliciousness my whole life as she went on and on about how amazing the biscuits were.  By this time there was no turning back, I had to make some for myself.  Whole wheat drop biscuits with molasses butter glaze should be everyone's Sunday tradition if you ask me.

This is for all of you lazy baker's out there (talking to myself here).  You know for those times when you get a baking whim and don't have the time to knead, let rise, or roll out anything.

Mini Apple Pies

Let's talk baking and why it can be terrifying.  I have admitted to you before, my talents do not lie in the baking department.  I mean the pressure of having to measure everything so perfectly and follow the recipe to a tee takes all the fun out of why I love to be in the kitchen in the first place.

And while I am not the most skilled baker, I do frequently get in a baking mood.  I have several recipes that I keep on hand to pull out that do not take much time or thought and usually I have most of the ingredients on hand.  This is how I usually end up baking...I get in the mood which is followed by rummaging through my pantry to see what I have in there already and that usually dictates what I end up making.

These cute little baby apple pies were the result of a really rainy day, where I was stuck inside and you can probably guess what happened next...yep, I was forced to bake something.  I had just bought quite a few of my favorite honey crisp apples, and thought hmm...of course, apple pies!
