Slow Cooker Thai Inspired Chicken Curry is one of the tastiest and easiest dinners you will prepare in your slow cooker. It’s truly a dump and go situation and the results will blow you away. Not only is it easy to prep, but it’s full of flavor, and a decently healthy meal that the whole family can enjoy. This is one of those recipes that requires minimal effort on your part and will quickly become of your favorite weeknight meals.

Besides the fact that this recipe is incredibly delicious, I love that there are minimal ingredients and that it can be served with rice, noodles, or just veggies for a lighter dinner option. It’s great leftover as the flavors just get even more intense making it ideal for meal prep on busy weeks.

While this recipe is inspired by traditional Panang Curry from Thailand, my recipe is a bit simpler with ingredients you can find in your pantry and at your local grocery store while not sacrificing any flavor.

To make this recipe there are just a few short steps and you can walk away and forget about it until you are ready to serve up dinner that night! Simply add sauce ingredients like coconut milk, stock, Thai red curry paste (a non-negotiable ingredient), garlic, ginger, lime, and a touch of sugar to balance out the sauce. You can add more red curry paste for heat and more intense flavor if you decide to or keep the recipe as is, which makes it mild enough for even the littles in your house.

I like to top it with fresh cilantro, red chiles or Thai chiles (for heat), and lots of green onions and serve over rice but you can serve it up however you and your family prefer.

Slow Cooker Thai Inspired Chicken Curry

Ingredients:

  • 2 Lbs. Boneless Skinless Chicken Thighs or Chicken Breasts

  • 1 Can Full Fat Coconut Milk

  • 1/2 Cup Chicken Stock

  • 2 Tbsp. Thai Red Curry Paste

  • 2 Tbsp. Finely Chopped Ginger

  • 2 Finely Minced Garlic Cloves

  • 1 Thinly Sliced Red Bell Pepper

  • 1/2 Cup Thinly Sliced Onion

  • 1.5 Tsp. Kosher Salt

  • 1 Tsp. Sugar

  • 1/2 Tsp. Black Pepper

  • Fresh Lime Juice

  • Cilantro for Topping

  • Green Onions for Topping

  • Red Chiles for Topping or other chile variety.

Directions:

  • Add coconut milk, chicken stock, Thai red curry paste, ginger, garlic, salt, sugar, and pepper to the slow cooker and whisk to combine.

  • Add in bell pepper and onion and then layer in chicken thighs making sure they are coated on both sides with the sauce.

  • Nestle the chicken into the sauce and place the lid on the slow cooker.

  • Slow cook on low for 5 hours.

  • Serve chicken and sauce over rice, with noodles, or with steamed veggies.

  • Squeeze fresh lime on top and finish off with cilantro, red chiles, and green onions and serve.
