Pumpkin Cupcakes with Spiced Cream Cheese Frosting

Are you over pumpkin recipes yet? I feel like I’m just getting started so I hope that you are on the same pumpkin loving page as me! I seriously cannot believe that Halloween is next week and then October will be over! This year is passing at a incredibly fast pace and while I am totally ready to put up my Christmas tree (ha), I also don’t want to rush these last months of the year! It finally feels somewhat like fall here in Texas, which at least makes me feel like it could be Halloween next week, and I am definitely embracing a little chill in the air! The weather has had me in a baking mood all week long and since the hubby’s favorite sweet treat is a cupcake, I made some scrumptious pumpkin cupcakes that needed to be shared with you! My pumpkin cupcakes with spiced cream cheese frosting are going to be on repeat in your kitchen all season long!

As I get older, my love for baking grows it seems. There is something therapeutic about measuring, mixing, and baking a treat for your loved ones. The smells that waft through the house, the delight on their faces as they take their first bite, and the act of love that it represents are all the things that I love about baking. People always ask me how I can bake regularly and not eat it all? Well the truth is I can’t, so I gift it to friends, send it to work with my hubby etc after enjoying at least a little for myself of course!

Pumpkin baked goods are some of my favorites, and my pumpkin bar recipe is one that I make every single year and is ALWAYS a crowd favorite! Normally I wouldn’t even think of making another pumpkin recipe, but I have to say that these cupcakes are giving the bars a run for their money! The spiced cream cheese frosting is perfectly fluffy, and gets slathered on top of a pumpkin cupcake that I made a little healthier by doing a little swapping of coconut oil and coconut sugar! The cupcake themselves, are just slightly sweet, so it pairs perfectly with the sweeter frosting!

Speaking of frosting, are you team lots of frosting, or on team just a little bit of frosting? I am usually on team just a little frosting, but this spiced cream cheese frosting is kind of amazing and I ate every bit of it on my cupcake! A fluffy and moist cupcake plus a super creamy frosting is the ultimate cupcake combo if you ask me and I am telling you that these are absolutely delicious (and so easy to make too!)

I can’t wait for you all to add this recipe into your fall baking rotation this year! They would be perfect to make for Halloween next week, as a Thanksgiving dessert or just to treat your family to a homemade treat!

Ingredients:

  • 1 and 3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 tablespoon ground cinnamon

  • 1 teaspoon pumpkin pie spice

  • 1/2 cup coconut sugar

  • 2 large eggs

  • 1 cup pumpkin puree

  • 1/2 cup melted coconut oil

  • 1/3 cup milk (can sub a non-dairy milk)

  • 1 teaspoon vanilla extract

For the Frosting-

  • 1/2 Stick Room Temperature Unsalted Butter

  • 4 oz. Room Temperature Cream Cheese

  • 2 Cups of Powdered Sugar

  • 1 Tsp. Vanilla Extract

  • 1 Tbsp. Milk

  • 1 Tsp. Ground Cinnamon

Directions:

  • Preheat oven to 350 degrees.

  • In stand mixer beat eggs with coconut sugar until smooth.

  • Add in pureed pumpkin and vanilla at this time and beat until smooth.

  • Slowly add in coconut oil and continue to mix until smooth.

  • In a large bowl combine flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice and whisk to combine.

  • Slowly add dry ingredients into wet ingredients until just mixed together.

  • Spoon into muffin tins that have been lined with cupcake liners and fill 3/4 full.

  • Bake for 17-20 minutes until a toothpick comes out clean.

  • Let cool.

  • While the cupcakes are cooling, cream together butter and cream cheese.

  • Slowly incorporate the powdered sugar and cinnamon and then add in vanilla and milk and turn up the speed to beat until the frosting is smooth.

  • Add more powdered sugar if desired for consistency.

  • Top the cooled cupcakes with frosting.
