Grilled Greek Shrimp Bowls

If you are looking for a healthy weeknight meal that the whole family can enjoy, I’ve got you covered with these delicious grilled Greek shrimp bowls. These bowls can be ready in under 30 minutes, are so full of flavor and you will want to make them on a weekly basis. Grilled marinated shrimp pair with Greek rice, fresh veggies, and a creamy tzatziki that all come together to make the ultimate dinner bowl! You will love making these grilled Greek shrimp bowls for an easy and healthy weeknight meal over and over again.

Can I prepare the shrimp another way?

While grilling is my preferred method here, you can also prepare the shrimp in a skillet or by roasting them in the oven at 375 degrees until cooked through.

What can I use instead of rice?

You can substitute the rice for farro, orzo, cauliflower rice, or omit all together if you prefer. My family loves rice, so we always serve my Greek rice with these bowls.

Can I buy Tzatziki?

YES! There are several brands of prepared tzatziki in most grocery stores, so if you want to save time on dinner prep, feel free to buy some.

Can I make a homemade Greek seasoning blend?

Yes! Simply make your own by combining oregano, dried garlic, dried onion, marjoram, dill, and thyme.

Grilled Greek Shrimp Bowls

Ingredients:

For the Shrimp-

  • 1 Lb. Shrimp (peeled and deveined)

  • 1 Tbsp. Olive Oil

  • 1 Tsp. Greek Seasoning Blend

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Black Pepper

  • 1 Tbsp. Fresh Lemon Juice

  • Greek Rice (can also use plain)

  • Pita Bread

  • 1 Tbsp. Fresh Dill

For the Salad-

  • 2 Cups Diced Romaine Lettuce

  • 1 Cup Persian Cucumbers

  • 1 Cup Halved Grape Tomatoes

  • 1/2 Cup Diced Feta Cheese

  • 2 Tbsp. Red Wine Vinegar

  • 2 Tbsp. Olive Oil

  • 1 Tsp. Salt

  • 1/2 Tsp. Black Pepper

  • 1/2 Tsp. Greek Seasoning Blend

For the Tzatziki-

  • 1 Cup Full Fat Greek Yogurt

  • Juice From One Lemon (about 2 tbsp.)

  • 1 Garlic Clove, grated

  • 2 Tbsp. Fresh Dill

  • 1/4 Cup Grated Cucumber

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions:

  • Prepare the rice before you start cooking anything else as this will take the longest.

  • Next, preheat grill to medium high heat.

  • While grill is preheating, make tzatziki sauce by whisking together Greek yogurt, garlic, dill, cucumber, lemon juice, and salt and pepper. Set aside in the fridge until ready to serve.

  • At this time also prep the Greek salad by combining cucumbers, tomatoes, feta, red wine vinegar, olive oil, salt, pepper, and greek seasoning in a bowl and toss to coat. Set aside.

  • Season shrimp with olive oil, Greek seasoning, salt, and pepper and toss to coat thoroughly.

  • Add shrimp to a grilling basket or skewer and then place onto preheated grill. Close the lid and cook on side one for 2-3 minutes until shrimp begin to turn pink.

  • Flip to the second side, or toss in grill basket and cook for another 2-3 minutes until shrimp are just fully pink and cooked through. Remove from heat.

  • Squeeze fresh lemon juice over top of the shrimp after they are removed from the grill.

  • While grill is still hot, add pitas and char slightly.

  • Assemble bowls by adding a base of rice and romaine lettuce and then add a couple of spoonfuls of the cucumber tomato Greek salad, along with 6-7 shrimp. Top with fresh dill and plenty of tzatziki.

  • Serve with grilled pitas and enjoy!
