Garlic and Shallot Green Beans

Green beans are a staple for a vegetable side dish at our house. There are so many ways to cook them, but I have found my favorite method and no other beans compare. These green beans are the kind of veggie side dish that you will want to make over and over again because they are just that good.  We have them at least once a week at my house and eat them like they are French fries, true story!  You will not have a problem getting your kiddos or any other picky eaters in your house to eat their green vegetables with a recipe like this. My Garlic and Shallot Green Beans are going to become your new favorite side to serve with almost every meal.

This green bean recipe is one that my toddler and my husband both approve of and couldn’t be any faster or easier to make. A few simple ingredients transform plain green beans into a special side dish perfect for weeknight meals and even entertaining. I guarantee this recipe will become a weekly staple at your house after you make it one time! You could do this same method with just about any other vegetable out there and it would also be delicious. I love using broccoli, brussel sprouts, and kale when I need a break from green beans. So feel free to mix it up based upon what veggies you have in the fridge.

You will not regret trying out this recipe, I am pretty sure that anyone who claims to not like green beans, will have a change of heart after they eat these gorgeous green beans.

Ingredients:

  • 12 oz. Haricots Verts (skinnier green beans) or regular fresh green beans

  • 1/4 Cup of Chicken Stock

  • 1 Thinly Sliced Shallot

  • 2 Finely Minced Garlic Cloves

  • 1 Tbsp. Extra Virgin Olive Oil

  • Salt and Pepper to Taste

Directions:

  • Heat olive oil in pan over medium high heat and add chopped shallot and minced garlic with some salt and pepper and sauté until translucent and tender.

  • Add green beans to the shallot and garlic mixture and add more salt and pepper (season as you go) and sauté green beans with garlic and shallots for 2-3 minutes.

  • At this time, add in chicken stock to de-glaze the pan and toss the beans to coat. Place lid on the skillet and continue cooking for 5-10 minutes, stirring every few minutes.

  • Once your green beans are slightly tender and still vibrant green, they are done. Taste test for more salt and pepper and season again if needed.

  • Serve immediately.
