Easy Waffles from Scratch

Breakfast is my family’s favorite meal of the day. They like to eat it for breakfast, lunch, or dinner, so any time of the day breakfast is a go around here. Matter of fact, we just had waffles last night for dinner and they were delicious. Every week I make a batch of my favorite waffles, usually on the weekend, because they freeze wonderfully and make for easy breakfasts all week long. I don’t know why I have never shared this recipe with y’all, because it is seriously the easiest and tastiest waffle recipe out there and the one I have been making for years. The only special equipment needed is obviously a waffle maker, which I highly recommend adding into your kitchen appliances if you don’t have one already. My easy waffles from scratch will have you wondering why you ever bought frozen waffles because they are just that simple and tasty!

To me the key to good waffles is to use good flour, don’t over mix the batter, and to use a good amount of vanilla for extra flavor. I don’t even add sugar to my batter because honestly I don’t think it needs it since we are going to cover them in maple syrup anyway! This is a personal preference and one that I will leave up to you when you make these beauties. I have made this recipe with two different types of waffle makers and it works for both, so whether you are making them Belgian style or regular waffle style, these will turn out delicious!

I make these waffles with both all purpose and whole wheat flour and both turn out great. I tend to like to even use half whole wheat and half all purpose to great a heartier, but still light waffle in texture. I love the whole wheat flavor to for a more rustic waffle, however, I love an all purpose flour only because of the light and airy texture that it gives the waffles! Again, this is going to be personal preference for you based on what kind of waffle you like best.

You can top them with berries, eat them plain, slather with butter (f you are my hubby), and of course drizzle with a good amount of maple syrup before you take a bite! You can’t beat homemade waffles on the weekend with some crispy bacon and fruit! Waffles have always been and always will be one of my favorite breakfasts recipes to add to any breakfast or brunch menu.

To this same recipe, you can alway add in chocolate chips or blueberries and turn them into specialty waffles. My boys love blueberry waffles so much so we do that pretty regularly. I happen to love my waffles and pancakes plain, so I usually make half with berries, and half without! I love that you can customize them based on what your crew prefers. This recipe makes about 8-10 waffles depending on your waffle maker size so whatever we don’t eat on the weekend, I freeze in a freezer bag and when I am ready to serve them up I simply pop into the toaster and they are as good as new! I told you that you will never buy frozen waffles again after realize how easy it is to make your own!

Ingredients:

  • 2 Cups All Purpose Flour

  • 1 Tbsp. Baking Powder

  • 1/4 Tsp. Salt

  • 1 Cup Whole Milk or Buttermilk

  • 1 Egg

  • 2 Tsp. Vanilla

  • 1/4 Cup Avocado Oil (I have also used olive oil and melted coconut oil here and both work great!)

Directions:

  • Whisk flour, baking powder, and salt together in a large bowl.

  • In another large bowl combine eggs, milk, vanilla, and oil and whisk to combine.

  • Slowly pour wet ingredients into dry ingredients until just smooth. Careful to not over-mix here so you don’t end up with dense waffles. Just whisk enough to get lumps out.

  • Heat waffle maker according to directions.

  • If using a nonstick waffle maker, you do not need to grease it, but if your waffle maker is not a non-stick, grease it once hot.

  • Add about 1/4 cup of waffle batter per waffle iron and cook until waffle maker is done and waffles are golden.

  • Repeat until all waffles have been cooked.

  • Serve with favorite toppings.

Tip: To keep the waffles warm as you are cooking them all, place the finished ones on a baking sheet that has a cooling rack on top and into a 200 degree oven. They will stay crisp on the outside and warm this way.
