Easy Tomato Galette Breakfast Platter

At this time of year when the holidays are in full swing, it usually means more guests in your house, which means more mouths to feed, which can sometimes be overwhelming! I am all about making it easier on myself when my house is full with meal ideas that don’t take a long time and are super easy! I am also all about the new trend of serving food on a platter or board family style so that the feeling stays super casual and guests can serve themselves whenever they are ready! My easy tomato galette breakfast platter is a great way to serve up breakfast to your friends and family this holiday season!

This platter is so gorgeous, you can make the galettes ahead of time, and simply reheat them in the oven the morning of to make things even easier on yourself! I use store bought pie dough to simply these galettes even more and your guests are going to be totally impressed I promise!

By the way a galette, is basically a super rustic pie, which is why I love them! They do not have to be perfect and you can fill them with sweet or savory options and they turn out delicious every time!

Ain’t nobody got time for perfect pie design this time of year!

I serve them up with some yummy chicken sausages, soft boiled eggs, avocado wedges, greens, and fruit with a good sprinkling of everything bagel seasoning and it’s just the best combo! The galettes themselves are filled with an herbed cream cheese, shallots, fresh thyme, and tomato slices and man oh man are they delicious! These are perfect for this time of year when tomatoes aren’t at their peak, because when you cook them they will ripen right up for you!

This platter would be perfect for any holiday brunch served with one of my bloody mary’s! Just saying (wink wink).

I am super pumped for you to try this out for yourself this holiday season and you can bet your guests are going to love it!

Ingredients:

  • 1 Store Bought Pie Dough (at room temperature)

  • 4 Campari Tomatoes, Sliced Thin (Can sub any tomato here)

  • 4 Tbsp. Onion and Chive Cream Cheese

  • 1 Small Shallot, sliced thinly

  • 1 Tbsp. Fresh Thyme

  • Salt

  • Pepper

  • 1 Beaten Egg

  • Everything Bagel Seasoning (optional, but recommended)

  • Chicken Sausage (or sausage of choice)

  • Avocados

  • Boiled Eggs

  • Spinach

  • Fruit of Choice

Directions:

  • Preheat oven to 350 degrees.

  • Lightly salt tomato slices and leave on a paper towel lined plate for 10 minutes to release excess moisture before baking. (This ensures your crust won’t get soggy).

  • Roll out the pie dough and cut into 4-5 circles. (You can do this by cutting around a cereal size bowl.)

  • Spread 1 tbsp. of cream cheese on the bottom of each dough circle leaving about an inch perimeter.

  • Add a few slices of shallot on top of the cream cheese and then layer a couple of slices of tomato on top of the shallot.

  • Season with fresh thyme and salt and pepper and then gently fold the edges of the dough up around the tomato slices.

  • Brush the folded edges lightly with beaten egg and bake for 15-20 minutes until galettes are golden.

  • While galettes cook, brown your sausages.

  • To serve, layer spinach, slice a few avocados into wedges, slice boiled eggs in half, add sausage links, and place onto a large platter with the galettes.

  • Add a good sprinkling of everything bagel seasoning to the avocados and eggs and then add fruit to the tray.

  • Serve room temperature or warm.

Note: If you want to make these in advance, simply let the galettes cool and then store in the fridge. To reheat, place onto a baking sheet and warm through the morning you are ready to serve.
