Easy Apple Chai Baked Oatmeal

It’s fall y’all and we finally have a cool front rolling through Texas right now. (Hallelujah!) I say, bring on the cozy breakfasts that taste so good on a chilly morning with a cup of coffee. Which is why you are going to love this new breakfast recipe that is perfect for meal prepping and busy mornings with your family. If you are a fan of overnight oatmeal, then you are going to love hopping on board the baked oatmeal band wagon. This recipe is so perfect for simply making at the beginning of a week and having on hand to reheat and serve up for yourself and your kids on those crazy mornings when everyone needs to get out the door. I took my favorite oatmeal flavors and added some cozy chai spices to create one seriously delicious breakfast for you! My easy apple chai oatmeal bake is going to become your new favorite fall breakfast.

I love how simple this recipe is. You cannot mess it up and it will just come out perfect every single time. I love the chai spices in this recipe mixed with the apple because they truly are the perfect match. Cinnamon, all spice, ginger, nutmeg, and cloves come together and spice up this breakfast in all the ways you hope it would, not to mention it smells heavenly when baking in the oven.

Apple chai oatmeal bake is a healthy breakfast that you can get on board with serving up to your family and I promise everyone will love it. I like to drizzle a little extra honey or maple syrup on mine with a little bit of cold heavy cream or milk to create the perfect breakfast bite every single time. There is something about the warm oatmeal bake with the cold milk or or cream that sort of gives me that pie taste of when you put cold ice cream on a warm pie right out of the oven. But this recipe is obviously way more acceptable for breakfast and you don’t have to feel bad about it one bit. Matter of fact after I made it, my husband asked if it was dessert because the house smelled so delicious. and when I told him it was oatmeal, he couldn’t believe it.

Ingredients:

  • 2 Cups Rolled Oats

  • 1 Cup Quick Cooking Oats

  • 1 Tbsp. Cinnamon

  • 1 Tsp. All Spice

  • 1/2 Tsp. Ground Ginger

  • 1/2 Tsp. Cardamom

  • 1/2 Tsp. Nutmeg

  • 1/4 Tsp. Ground Cloves

  • 1/4 Tsp. Salt

  • 1 Tsp. Baking Powder

  • 2 Eggs

  • 2 Cups Milk

  • 1/4 Cup Melted Butter or Coconut Oil

  • 1 Tsp. Vanilla Extract

  • 1 Cup Grated Apples

  • 1/2 Cup Honey or Maple Syrup

Directions:

  • Preheat oven to 350 degrees.

  • Mix oatmeal, cinnamon, all spice, ginger, cardamom, nutmeg, cloves, salt, and baking powder in a large bowl.

  • In another large bowl combine eggs, milk, butter, vanilla, apples, and honey and whisk to combine.

  • Stir wet ingredients into dry ingredients until just combined.

  • Pour batter into a greased 9 x 9 or 9 x 13 baking dish and top with a few extra apple slices.

  • Bake for 35-45 minutes until golden brown and center has set. Note: the 9 x9 will take longer than the 9 x 13 due to thickness.

  • Let cool slightly before serving and then drizzle with a little extra honey or maple syrup and milk or heavy cream.

    Note: Will keep in the fridge for 5-6 days and can simply be reheated before serving. Feel free to switch up the milk to a non-dairy version and also you can substitute GF oats here as well.
