Double Blueberry Waffles

It’s Monday which means busy mornings are in full swing around here! One of my favorite ways to survive the morning is to have a freezer and fridge stocked with easy breakfasts! I have a kiddo who wakes up asking what is for breakfast before I have even fully opened my eyes and so having a breakfast I don’t have to think about is a lifesaver! Things like mini frittatas, muffins, and waffles are just a few of the recipes I like to have on hand at all times! Lately I am so obsessed with blueberry everything and just can’t seem to get enough! I created these double blueberry waffles on a whim one weekend and have been making them ever since!

Do you make your own waffles? If not, I can’t recommend getting your own waffle iron enough if you don’t have one! They are so easy to make and they freeze so perfectly! Not that there is anything wrong with store bought freezer waffles…hey, we have all been there, but I love making my own so I can control the ingredients and feel better about serving them up to my family! They also happen to be our favorite weekend breakfast and I make some version of a waffle almost every Saturday morning! The leftovers go into the freezer and therefore become an easy breakfast all week long!

#WINNING

These double blueberry waffles are the perfect summer waffle and are SO good guys! The waffle itself tastes similar to your favorite bakery style blueberry muffin and then I make a simple blueberry syrup to go on top taking the blueberry factor to the next level! What I love about the syrup is that it only uses two tablespoons of maple syrup and the rest is just fruit making it a bit healthier of a syrup option!

Serve these up with some breakfast sausage or smoky bacon and you’ve got yourself a home run for a lazy weekend morning or a quick weekday breakfast in a hurry!

If you want more breakfast ideas that are freezer friendly, you might be interested in these recipes as well!

Ingredients:

  • 2 Cups Whole Wheat Flour

  • 1 Tbsp. Baking Powder

  • 1/8 Tsp. Salt

  • 1 Tsp. Coconut Sugar

  • 1 1/2 Cups Milk of Choice

  • 1 Egg

  • 1 1/2 Tsp. Vanilla Extract

  • 1/4 Cup Avocado Oil

  • 1 Cup Frozen Wild Blueberries (can sub regular fresh or frozen blueberries)

For the blueberry syrup-

  • 2 Cups Blueberries

  • 2 Tbsp. Maple Syrup

  • 1 Tsp. Vanilla

Directions:

  • Preheat waffle iron.

  • Mix flour, baking soda, salt, and coconut sugar in a large mixing bowl.

  • In another large bowl, add milk, egg, vanilla, and oil and mix to combine.

  • Slowly fold in wet ingredients into the dry ingredients until well combined.

  • Fold in frozen blueberries into the batter.

  • Place about 1/4 cup of batter into each waffle iron (more or less depending on your waffle maker) and cook until done.

  • While the waffles cook, add blueberries, syrup, and vanilla to a saucepan and cook over medium heat for 5-10 minutes until blueberries burst creating a syrup. Stir occasionally and then turn off heat when done.

Note: I like using wild frozen blueberries because they are smaller and it’s just a personal preference for using them in baked goods, but you can definitely use regular fresh or frozen blueberries as well!

How gorgeous are these waffles guys? I can’t wait for you to try them out for yourself! You and your whole family are going to love them! Happy waffling!
