Carrot Cake Bread with a Cream Cheese Glaze

Carrot cake is one of those classic Springtime desserts that everyone loves. Which is why I took all of the carrot cake goodness and created a delicious carrot cake bread that is super easy to make all season long. What makes this recipe great is that there are no layers to make perfectly and the icing is a simple glaze. This recipe is a no fail carrot cake y’all and I’m here for it. Serve this bread up for breakfast or dessert and I guarantee everyone will go crazy for it. If you are tired of making banana bread every time you get the baking bug, then this carrot cake bread is the perfect recipe to switch things up. My family loves it any time of the day, but it makes a delicious option for breakfast or dessert. This carrot cake bread has all of the classic spices with notes of cinnamon, nutmeg, and all spice and has loads of carrots running throughout. I am a little bit of a purist when it comes to carrot cake and prefer mine without raisins or nuts, but if that is your jam, feel free to add those to the recipe as well. You can also substitute whole wheat flour instead of all purpose as well as subbing out a different sugar if you prefer as long as quantities are kept the same. This carrot cake bread will keep in the fridge for up to a week, but I doubt it will ever last that long!

Ingredients:

  • 2 Eggs

  • 1/3 Cup of Milk

  • 1/4 Cup Avocado Oil

  • 1/4 Cup Greek Yogurt

  • 1/2 Cup Unsweetened Apple Sauce

  • 1 Cup Finely Grated Carrots

  • 1 1/2 Tsp. Pure Vanilla Extract

  • 3/4 Cup Sugar (can use granulated, coconut, or brown)

  • 1 3/4 Cup All Purpose Flour

  • 1 Tsp. Cinnamon

  • 1/4 Tsp. Nutmeg

  • 1/4 Tsp. All Spice

  • 1 Tsp. Baking Soda

  • 1 Tsp. Baking Powder

  • 1/4 Tsp. Kosher Salt

For the Cream Cheese Glaze-

  • 2 oz. Room Temperature Cream Cheese

  • 2 Cups Confectioners’s Sugar

  • 1/2 Tsp. Vanilla

  • 2-3 Tbsp. Milk

Directions:

  • Preheat oven to 325 degrees.

  • Mix together eggs, milk, applesauce, oil, carrots, and vanilla in a bowl and whisk until well combined.

  • In another bowl add flour, sugar, cinnamon, nutmeg, all spice, baking soda, baking powder, and salt and whisk to combine.

  • Slowly fold in dry ingredients to the wet ingredients until well combined.

  • Pour into a parchment lined or greased bread loaf pan and bake for 50-60 minutes until a toothpick can be inserted into the center and come out clean.

  • Let cool.

  • Meanwhile make the glaze and blend together cream cheese, confectioner’s sugar, vanilla, and milk until smooth. Add more milk if needed, a tsp at a time for a thinner consistency.

  • Remove the carrot cake bread onto a wire rack and pour the glaze over the top.

  • Slice when ready to serve.
