Cherry and Vanilla Yogurt Granola Pops

Okay so I just realized that all of my last recipes have been all about fruit.  I guess that's because the heat index in Houston has been 104 degrees lately and fruit is my favorite snack of choice when it is hot outside!  The fruit that is produced at this time of year is one of summer's greatest qualities if you ask me, and they just so happen to be all of my favorites!  Right now I'm all about sweet cherries and have been eating them in my smoothies, plain-jane by themselves, and even in popsicles!  My cherry and vanilla yogurt granola pops are healthy and delicious and, the best part, they are perfectly suitable for breakfast!

Seriously though what sparked these popsicles was a yogurt bowl that I made with fresh cherries, yogurt, and my favorite granola.  It was so good I honestly felt like it was a dessert.  I thought to myself, you know what??  This combination needs to be a popsicle!  These pops are adult and toddler friendly and you can feel great about eating one (or two) of them whenever you want!

Parks happens to also be cherry obsessed and so needless to say he devours these pops on the regular.  For a mom, these popsicles are a dream because your kiddos will not only gobble them up, but you can also snag a few moments of peace while they do!  (And let's be honest here, it's the only reason the popsicle mess is worth it.)

Ingredients:

  • 2 Cups Fresh, Pitted Sweet Cherries

  • 1 Cup of Plain Yogurt (Greek or Regular, I used Whole Milk Plain)

  • 1 Tsp. Pure Vanilla Extract

  • 1 Tsp. Maple Syrup

  • 1/2 Cup of Your Favorite Granola (I used a gluten free, plain honey and oat one)

Directions:

  • Puree the pitted cherries using a blender or food processor.

  • Mix together yogurt, vanilla, and maple syrup and stir until blended well.

  • Take popsicle mold and spoon some of the cherry puree in the bottom of the mold, followed by a a sprinkle of granola, and then a spoonful of vanilla yogurt and repeat the layering process until the mold is full.

  • Place a popsicle stick in the middle of the popsicle and freeze overnight.

  • When ready to serve, simply run the mold under water for a few seconds to loosen from the mold and gently remove the popsicle.

  • Serve immediately.
