Pink Lemon Kiss Cocktail

Hi...it's me...I've finally made my way back to you!  I know you missed me right?  (Well tell me you did even if you didn't.)  So, since the last time I talked to you two really exciting things have happened!  For one, I have officially written and submitted the first draft of cookbook number two and so now I will have some time again to get back to blogging!  And the second exciting news that I have to share with you is that I am joining the Drizly team as one of their TopShelf bloggers!  This means I will be creating some really yummy cocktails for them and to share with you!  With Valentine's Day being on a weekday next week, I'm kickstarting my new gig with the perfect Valentine's Day brunch cocktail for you to celebrate early with this weekend!  My pink lemon kiss cocktail is the perfect romantic cocktail to go with any Valentine's Day celebration that you might have going on!

If you are anything like me and my hubby, weeknights aren't the best option for a romantic date night!  By the time work is over, you both are home, and dinner is cooked, you are too tired to do anything else but go to sleep!  And if you have kids, well then you can really throw that idea out the window.  That's why I think brunch is the perfect way to celebrate early!  Brunch is one of our favorite things to do together so it only seems natural that we would celebrate Valentine's Day together over a yummy brunch complete with a refreshing cocktail!

In my opinion, every brunch needs a cocktail, and in this case it needs a super romantic cocktail that your honey will love!  I have made you a cocktail that oozes "I love you" and it will pair perfectly with just about any brunch menu!  

Pink lemons are so beautiful and are only in season for a small part of the year (Valentine's Day happens to be in this time period) and make for the prettiest cocktail.  Their flavor is similar to a regular lemon, but the color just makes them extra special.  The pink lemons give this cocktail the palest of pinks hues creating a feminine and extra romantic drink that would make anyone feel special!  

I think you are going to love this champagne cocktail while you cozy up to your sweetie!  Cheers!

Ingredients:

  • 1/4 Cup Pink Lemon Juice (Can substitute regular lemons too)
  • 3 Oz. Simple Syrup (1/2 Cup water, 1/2 cup sugar, bring to a boil until sugar is dissolved and then chill thoroughly.)
  • 2 Oz. Gin (Buy it Here)
  • Extra Dry or Brut Champagne (Buy it Here)

(Recipe makes two cocktails.)

Directions-

  • Mix pink lemon juice, simple syrup, and gin in a cocktail shaker with two ice cubes and shake until chilled.
  • Pour into a glass and top off with champagne.
  • Serve immediately.
