Dill and Garlic Pimento Cheese

Do you have a favorite food from your childhood that you have clear memories of eating and still love to this day?  It's nostalgia at it's best.  From the first bite you are transported back in time maybe to a certain memory or just to the feeling that it still gives you.  For me pimento cheese sandwiched between two pieces of white bread is still to this day, a little slice of heaven.  Growing up, I wasn't too concerned with white vs. wheat, does it have too much mayo...yada yada yada.  It was all about the texture of the pimento cheese and the soft bread that sold me every time.  And to be honest it's still a favorite comfort food combo of mine.  My dill and garlic pimento cheese is my take on a classic with a grown up twist that is perfectly acceptable for your grown up lunchbox or party.

Canean has told me since we have met that he swears he does not like pimento cheese...what's not to love I could never figure out.  He wouldn't even try it, I would even try to trick him. Then a couple of weekends ago when we were at a Mardi Gras ball (it was dark) he accidently had some and was like "mmm, this is good what is this?" Of course it was pimento cheese....see I knew he liked it!

Here was my in, my chance to make it at home because now he would eat it with me preventing me from eating a whole tub by myself!  

Dill, garlic, and cheddar make for the ultimate pimento cheese and when you make it at home, you don't have to worry about too much mayonnaise, and you end up with the perfect consistency for your ideal pimento cheese.

I love this particular pimento cheese spread on crackers for an afternoon snack, a party appetizer, or of course I wouldn't be opposed to an old fashioned pimento cheese sandwich too!  Whole wheat or white bread...choose your poison.  And if you want to top your burger with pimento cheese and let it melt and get super gooey, I would be okay with that too.

I still believe in after school snacks no matter what your age, and this dill and garlic pimento cheese will make any day better!

Ingredients:

  • 5 Oz. Sharp Cheddar, grated

  • 5 Oz. White Cheddar, grated

  • 4 Oz. Diced Pimentos, drained

  • 1/2 Cup of Lite Mayonnaise

  • 4 Tbsp. Chopped Fresh Dill

  • 1 Garlic Glove, grated

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions:

  • Combine all ingredients into a bowl and mix well. Adjust your pimento cheese consistency by adding more mayonnaise if you so choose.

  • Chill for at least an hour to allow flavors to combine.

  • Serve with crackers, on bread, make a grill cheese, slather on a burger...the options are endless.

This recipe is so good y'all, I can't wait for you to try it.  It's even approved by my hubby who thought he didn't like pimento cheese...pshhh.
