Healthy Chipotle Turkey and Spiced Potato Tacos

I could eat Mexican food every day of the week...I kid you not.  But I obviously can't do that because the result would be me not fitting into my jeans and nobody wants that, especially me.  And although cooking Mexican at home is never the same, but it can be done and it can be delicious (and healthy).  It's a great way to get your fix without the high calorie margarita (which is kind of a requirement if you are at a restaurant) and without two baskets of chips being inhaled before your entrée arrives.  My healthy chipotle turkey and spiced potato tacos get you all that flavor without the I had too much sodium, swollen fingers the next morning.

Yeah, you know exactly what I'm talking about.

This meal is perfect for any weeknight because it can be ready in thirty minutes and is a relatively inexpensive meal too.  I doubt any family members will turn their nose up at taco night, and the leftovers are quite possibly better the next day. 

Every house needs a taco night...don't you think?  I don't think I've ever met someone who says nah, I don't like tacos.  Or maybe I'm just not friends with non-taco loving people... 

Lean ground turkey is seasoned with spices and chipotle peppers and then stuffed inside a warm tortilla and topped with pickled red onions, cilantro, black beans, green onions, and spiced potatoes...which might seem weird, but trust me it's delicious.

There is no reason you couldn't eat these tacos every night if you wanted and I know for a fact you would still fit into your favorite pair of jeans. 

Ingredients:

Chipotle Ground Turkey-

  • 1 Lb. Lean Ground Turkey
  • 1 3.5 Oz. Can of Chipotle Peppers in Adobe Sauce (Chopped)
  • 1 Tbsp. Cumin
  • 1 Tbsp. Coriander
  • 1 Tbsp. Smoked Paprika
  • 1 Tbsp. Oregano
  • 1 Tsp. Salt
  • 1 Tsp. Pepper
  • Flour or Corn Tortillas

Potatoes-

  • 6-8 Red Potatoes (diced small)
  • 1 Tsp. Cumin
  • 1/2 Tsp. Smoked Paprika
  • 1 Tbsp. Olive Oil
  • 1 Tsp. Salt
  • 1 Tsp. Pepper

Toppings-

  • Pickled Red Onions (combine one onion, 3/4 Cup of Red Wine Vinegar and 3/4 Tsp. Salt and let sit overnight or at least two hours until onions are softened.)
  • Cilantro
  • Black beans
  • Green Onions

Directions:

  • The night before or the morning of combine your ground turkey with your spices and chipotle peppers.  Mix well and let marinate until ready to cook in the fridge.
  • Preheat oven to 400 degrees.
  • Season your potatoes with cumin and paprika and mix with the olive oil until coated well.  Place in an iron skillet on medium heat for about 10 minutes stirring frequently until the potatoes start to have a crisp.
  • Place your skillet in the oven to finish the potatoes for another 15-20 minutes until potatoes are tender.
  • While your potatoes are cooking, brown your seasoned turkey in a large pan until cooked through.
  • Warm your tortillas in the oven or in a skillet.
  • To assemble tacos, place your cooked chipotle turkey, potatoes, and desired toppings in the tortilla and serve immediately.

And I'm not saying it wouldn't be a bad idea to make a skinny at-home margarita to go along with this meal...you know if you are into that sort of thing.
