Cantaloupe, Ginger, and Coconut Popsicles

Popsicles and summertime...it really doesn't get any better than that.  The memories I have as a little girl with grape and cherry popsicles running down my face in my bathing suit outside with a sprinkler in the yard are some of my favorite summertime memories.  And let's be honest here, not much has changed, I'd eat a grape popsicle any day of the week and half the time here in Louisiana I'd like to be running through a sprinkler!  The popsicle craze has officially taken over and you can make just about any flavor combination that you want right at home.  Flavor combos like my cantaloupe, ginger, and coconut popsicles that are O-M-G good!

Making popsicles at home is so easy, and you can make them as healthy or not healthy as you want! The possibilities are endless! 

Canean was skeptical about my cantaloupe popsicle, mostly because he is still the guy who gets really excited about drumsticks and original popsicle flavors and is not so sure about the need for this gourmet popsicle mania that is taking over.

He changed his tune pretty quickly guys when I made him try one.  You'd think he would trust me by now on what will be delicious right?   And guess what?  He loved them...

The flavors mesh so well together almost taking you on a tropical mental vacation!  Not too sweet, and slightly creamy they are almost like a second cousin to the creamsicle...but way cooler.

These popsicles are super healthy on top of it all, so feel free to eat more than one...I did.

Ingredients:

  • 3 Cups of Fresh Diced Cantaloupe
  • 1 Can of Reduced Fat Coconut Milk
  • 1/4 Cup Chopped Crystallized Ginger
  • 1/4 Tsp. of Ground Ginger
  • 1/2 Cup of Honey
  • 1/4 Cup 2% Greek Yogurt

Directions:

  • Mix together all ingredients in a food processor or blender except for the crystallized ginger until smooth and creamy.
  • Pour the mixture into popsicle molds or you can even use little paper cups and leave a smidge of room for the crystallized ginger.
  • Sprinkle several pieces of the crystallized ginger into each mold.
  • Let freeze for 30 minutes before you stick your popsicle sticks in, unless you are using the ones that came with the molds.
  • After letting it set for 30 minutes, carefully stick in your popsicle sticks in the center of each pop.
  • Let freeze for 6 hours or until hard.
  • Run the mold under hot water for a few seconds when you are ready to eat and the popsicle should come right out. 

You basically need to make these popsicles, put your bathing suit on, and run through a sprinkler...then you can say that your summer is complete.
