Ginger Molasses Cookie and Egg Nog Ice Cream Sandwiches

What is better than a glass of Egg Nog during the holidays? 

Egg Nog ice cream that's what, sandwiched between two chewy Ginger Molasses Cookies.  Whoa...prepare to have your mind blown!

It is basically holiday wrapped up into one lip smackin' good ice cream sandwich. 

I am a big fan of ice cream being an appropriate dessert all throughout the year.  I am the girl who has a scarf and gloves on eating ice cream outside that people look at like she's crazy.  This is because ice cream happens to be one of my favorite foods.  There is no way I could ever give it up.  My father-in-law happens to be the only other person I know who loves it as much as I do.  We have  formed quite the ice cream bond over the years.

My husband on the other hand prefers cookies.  All kinds of cookies (except sugar cookies), which is why ice cream sandwiches make both of us really happy.  It's the best of both worlds! 

Since egg nog is pretty much an ice cream base in a drink it was the easiest ice cream I have ever made.  And the ginger molasses cookies are super easy as well and are the perfect spicy balance to the decadent ice cream.  Just build the sandwiches and freeze them individually and they are ready when you are. 

Ingredients:

Ice Cream-

  • 2 Cups of Egg Nog (full fat works the best and fully chilled)
  • 1/2 Cup Heavy Cream (fully chilled)
  • 1/4 Tsp. Cinnamon
  • 1/4 Tsp. Nutmeg
  • 2 1/2 Tbs. of Dark Rum (optional)

Cookies-

This recipe is one that my friend, fellow blogger, and amazing baker (Crème de la Carol) made for me a couple of years ago, and I have been using it ever since. It's so good. 

  • 3/4 Cup Butter (softened)
  • 1 Cup Sugar
  • 1 Egg
  • 1/4 Cup Molasses
  • 2 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Ground Ginger
  • 1/2 Tsp. Cloves
  • 2 1/2 Cups All Purpose Flour

Directions:

Ice Cream-

Mix all ingredients into a bowl and pour into your ice cream maker.  Turn on maker and let go until it is the desired consistency.  Freeze for at least a couple of hours before you make your sandwiches. 

Cookies-

Heat oven to 350 degrees.  Use either a greased cookie sheet or one lined with parchment paper or a silicone liner.

Beat together your butter, sugar, egg, and molasses until thoroughly combined.  Next add in your baking soda, salt, ginger, and cloves.  Lastly you will add in your flour one cup at a time until mixed well and dough has formed.

Take a tablespoon and drop the dough onto your cookie sheet about an inch apart and brush top with water and sprinkle generously with sugar.

Bake for 9-11 minutes,  leaving the cookie chewy inside.

Let cookies cool entirely before building sandwiches, but go ahead and taste one because they are so good when they are warm out of the oven!

Next, take one scoop of ice cream and place onto one cookie and then place another cookie on top and press slightly.  These cookies are great for this because they are pliable with their chewiness.

Seriously, these are out of control good.  It really is the perfect dessert for the holidays.
