Hi! Welcome to My Diary of Us, where I share healthy family friendly meals that are easy to create in any kitchen. I'm Leigh Ann, a food enthusiast, mama to a blued eyed boy, and wife to an incredible man, with a passion for this life I have been blessed with and the food that I create. Thanks for visiting and I hope we will become fast friends! Here are a few tidbits about me:
I am originally from Tennessee.
I met my husband at the beach when we were 18 (enter unexpected Cajun) and moved to Louisiana four years later to be with him.
Even though Tennessee will always be home, me and Louisiana were destined to be together. I fell in love with the culture, people, and the food. I can out-eat most born Cajuns when it comes to boiled crawfish and crabs and regularly get teased by my in-laws for having a second stomach for the seafood.
I am a mom to a beautiful little boy named Parks and a furry child named Amos.
I LOVE food...cooking, eating, plating it, and taking pictures of it.
I could eat Mexican or Italian food everyday for the rest of my life.
Wine is necessary for most occasions.
I think I'm funnier than my husband does and usually laugh at my own jokes more than those listening.
I interned at Seventeen Magazine and lived in NYC my last semester of college and it was one of the best experiences of my life.
I am a firm believer in God's plan for your life and am a great example of how His plan was far better than any I had for myself.
If I could live anywhere it would be somewhere near the ocean...walking distance preferably.
I have written two cookbooks. (Pinch me)
Rachael Ray taught me my chopping skills while watching The Food Network in high school, and from there a few more handy tricks I still use in the kitchen.
My two best friends are from high school and are the sisters I never had.
I love traveling. Seeing new places, tasting new food, and meeting new people is nourishment to the soul. There are only a billion places left still to see...
Italy is at the top of the list...
I believe in fairytales even though the world tells me not to.
I have dreams of having my own cooking show one day.
My favorite color is green.
I believe in chasing your dreams and taking chances...so I am doing just that.
