I've been teasing you with this recipe for almost a month now if you follow me on social media, and I really do apologize for that! Life, work, and everything else has been crazy and holiday recipes have been taking over my life. Which don't get me wrong...I love me some holiday recipes, but we also need some healthy balance in between the cookies, wine, and homemade doo-dads! Enter sweet potato and chickpea curry soup...here to fill your bellies with nothing but the good stuff, all the while being super tasty too!
For the past two weeks I have been battling one heck of a cold. I'm on the tale end of it now, but there is still a tinge of congestion going on and now Parks kind of has the same thing. I guess it's just the time of year, but I usually pride myself on being someone who doesn't get sick very often! I guess that is what I get for thinking that, because this one has been a doozy. One thing that is for sure whenever I am under the weather, a big bowl of pho is always what I crave and almost always makes me feel better instantly! My homemade chicken pho is easy enough to whip up any day of the week and is sure to cure all of your sniffles!
The weather has turned only slightly here, but there has been a new crisp evening air that has me craving all things comforting for dinner. Something somewhat healthy, that is warm and full of flavor is usually what I try to make! Soups are so good for just that because you can make them ahead and eat on them all week for easy dinners and for the most part you can control the ingredients keeping them as healthy as you and your family want them! My easy white bean, smoked sausage, and kale soup is just the kind of meal that I crave on a weekly basis!
Dare I say that I can finally feel a hint of fall? The air is definitely changing here in Texas, even though it is still pretty hot compared to some other parts of the country, it's feels pretty great to me. I had the windows open all weekend and definitely felt the fall baking bug and soup cravings hitting me hard. Anyone else have this happening right now? It seriously feels like forever since I blogged a recipe. I am trying to get back into the swing of things now that all the recipes in the cookbook have been completed, and slowly but surely it is all coming back to me. Getting back into a routine with not only work, but life in general has been much needed.
I was on a roll last week with working out, eating right, and getting back to some kind of regimen and then bam that stratchy throat feeling came at me hard on Friday. I knew it was coming and even though I tried to drink it away with ginger tea and vitamin packed smoothies, it just got worse. Turns out it was a nasty sinus infection and I am finally feeling somewhat better after a few days on antibiotics. I don't know about you, but when I don't feel good I crave soups non-stop. There is just something about the warm broth that makes me feel better instantly. My pozole rojo with pork is just the kind of soup that I want when I am sick (or not sick honestly) and I think that you will love it too!
The weather has turned here in Texas, and I am hoping it's here to stay! The nights have been chilly, the days crisp, and I've been in the mood for all the soups. I am one of those people who could eat soup on a hot summer day, but I don't make them as much because Canean is definitely not one of those people. This gets me really excited for fall and winter when I can make as many soups as I want!
