I don't know about you, but when summer rolls around the last thing that I want to do is use my oven in any capacity. The air conditioner is already running 24/7 to keep the house at a reasonable temperature, and the last thing I want to do is add any heat to the mix! I am all about easy summer salads that I can grill up a protein to pair with it and call it done-so! My spicy peach and corn summer salad is my new obsession because it's spicy, sweet, and full of textures that you are going to love!
Okay so I just realized that all of my last recipes have been all about fruit. I guess that's because the heat index in Houston has been 104 degrees lately and fruit is my favorite snack of choice when it is hot outside! The fruit that is produced at this time of year is one of summer's greatest qualities if you ask me, and they just so happen to be all of my favorites! Right now I'm all about sweet cherries and have been eating them in my smoothies, plain-jane by themselves, and even in popsicles! My cherry and vanilla yogurt granola pops are healthy and delicious and, the best part, they are perfectly suitable for breakfast!
I don't know about you, but my mama always taught me to salt my melons. It can take a mediocre melon to pretty dang good with just a little sprinkle. To me there is nothing that says summer more than a cold slice of watermelon sprinkled with just the right amount of salt. It's the perfect snack, although I can literally eat my weight in watermelon, which actually can turn into a problem. I mean...I guess if you are going to be addicted to a food, fruit is one of the better options, but still y'all...I have ZERO self control when it's a good one! I will tell you that I have found the perfect way to add a little pizazz to your next watermelon that will be a hit at any BBQ or picnic! My chili lime salted watermelon is going to become your new favorite thing to eat this summer, and I can promise you that!
Happy Thursday guys! One more day to get through until the weekend and I am already dreaming about refreshing cocktails because it has been getting hotttt y'all! And when the weather is hot outside there are only two things that sound good and those are being near a body of water and/or drinking a refreshing cocktail. Let's be honest, I'd prefer to be drinking a refreshing cocktail by that body of water, but I'll take either or right now! One of my favorite simple and refreshing cocktails is a screwdriver and I made it even more refreshing by creating a frozen version that is amped up in flavor! I wouldn't consider myself a non-computer person, but I also would not consider myself a savvy computer gal. I get by and know how to do the things I know how to do...you know what I mean? Anyway, I have been putting off creating food recipe videos for a while because it is out of my comfort zone, but yesterday I decided to bite the bullet and create my very first video with a super simple recipe that happens to be one of my favorite side dishes! My crispy roasted potatoes are perfect for any night of the week and can be served at breakfast, lunch, or dinner!
Happy Monday! How was your weekend? I hope it was as good as mine! Parks and I flew back from Georgia on Saturday and spent the rest of the weekend hanging out with daddy. We played in the sprinkler, Canean cooked dinner for me (grilled BBQ crabs and oysters Rockefeller...whhhatttt!) He definitely spoiled me this weekend and I took full advantage! Today I'll be back in the kitchen and catching up on a week from being out of town. Anytime I have busy weeks like this I am always looking for easy meals that taste amazing. My ultimate steakhouse-style salad is one of those wow salads that you totally could have as a meal alone or you can serve alongside a juicy steak! Your choice!
