Happy October! It’s officially soup season if you ask me and even thought it’s hotter than fall should technically be here in Texas! We have had a very rainy start to the season which has been perfect for making my favorite soups and getting me in the mood for all things pumpkin and cozy despite the heat. I sure love summertime, but I also really love fall. There is something about the season that just feels comforting and homey right? October is the month that Parks was born, cooler temps hopefully show up, and my favorite holidays are not far away! To kickstart the month, I have rounded up my top ten favorite fall soups to help you get in the cozy kitchen mode too!
April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
Happy New Year Friends! We have literally been out of town for almost a full two weeks and I am slowly getting back into the swing of things. Not to mention that it is COLD here in Texas, which basically never happens, and I know what you northerners are thinking...it can't be that cold, but guys...the temp went down to 23 degrees last night! I don't care where you live, that is cold, especially to those of us who are used to mild winters! So while I am definitely hopping back on the healthy food wagon this week, I need some stick to your bones kinda food...because hello cold weather! My homemade beef and vegetable soup is exactly the kind of meal that we all need in our lives right about now and you need to make it ASAP!
I've been teasing you with this recipe for almost a month now if you follow me on social media, and I really do apologize for that! Life, work, and everything else has been crazy and holiday recipes have been taking over my life. Which don't get me wrong...I love me some holiday recipes, but we also need some healthy balance in between the cookies, wine, and homemade doo-dads! For the past two weeks I have been battling one heck of a cold. I'm on the tale end of it now, but there is still a tinge of congestion going on and now Parks kind of has the same thing. I guess it's just the time of year, but I usually pride myself on being someone who doesn't get sick very often! I guess that is what I get for thinking that, because this one has been a doozy. One thing that is for sure whenever I am under the weather, a big bowl of pho is always what I crave and almost always makes me feel better instantly! My homemade chicken pho is easy enough to whip up any day of the week and is sure to cure all of your sniffles!
The weather has turned only slightly here, but there has been a new crisp evening air that has me craving all things comforting for dinner. Something somewhat healthy, that is warm and full of flavor is usually what I try to make! Soups are so good for just that because you can make them ahead and eat on them all week for easy dinners and for the most part you can control the ingredients keeping them as healthy as you and your family want them! My easy white bean, smoked sausage, and kale soup is just the kind of meal that I crave on a weekly basis!
