In case you were wondering, I am still here! Sorry for the radio silence, but I took some time off because my hubby and I were in Hawaii celebrating our ten year anniversary! I decided to put work to the side and just focus on the two of us, and it was so nice! And now that we are back, I cannot believe that it is already June! (The year is passing so quickly already, right?) That means summer is just around the corner and backyard BBQ's are in full effect! My avocado crema slaw is the perfect side dish to make all summer long!
Summer is right around the corner and it's my favorite time of year for produce! Tomatoes in particular are at their peak and can most definitely shine on their own during this time. I love creating simple dishes when ingredients are so good that they just don't need that much more added to them! When BBQ season and outdoor entertaining are in full swing, I love bringing lighter and healthier dishes to the table to balance out the rest of the spread. My new favorite dish that I will be making all summer long is my garlic and dill tomato salad with cornbread croutons!

Anyway, I have been putting off creating food recipe videos for a while because it is out of my comfort zone, but yesterday I decided to bite the bullet and create my very first video with a super simple recipe that happens to be one of my favorite side dishes! We are finally all feeling better around here and I have health on the brain as one of my top priorities for this year! I am definitely not talking about losing weight here, but more about over all health and taking care of myself better so I can be a better mom, a better wife, and better at my job! One of my favorite ways to incorporate more nutrients into my diet is to sub cauliflower for things like rice and mashed potatoes when I have those carb cravings hitting me hard! Holy moly, where has this year gone guys? Christmas is in FIVE days and I am not sure if I am ready or not! My shopping is done, but I just don't know if I am ready for the season to be over and for all of the Christmas decorations to come down. Everything looks so pretty with extra twinkle from the lights and my house always feels so bare when the tree goes down. I am trying to soak up these last days before Christmas and do all of the Christmas things like making tons of cookies, blaring Christmas tunes, and planning out my menu! To me, potatoes are a must on Christmas and my easy potatoes au gratin are always a hit at the table!
Happy Thanksgiving week guys! I cannot believe that it is already that time and I haven't even been to the grocery store yet! I get a little bit of anxiety about getting to the store and beating the Thanksgiving rush of shoppers, afraid that they might buy all of my ingredients before I have a chance to. Does that happen to anyone else or am I just OCD? We were out of the town last weekend for my sister-in-law's wedding so I didn't get to the store during my usual time frame! Nevertheless, I will be shopping for ingredients today and one thing is for sure, I will be getting everything I need for my simple and creamy mashed potatoes.
