Summer isn't officially here, but I feel like it has already made it's way to Texas! Blazing hot days have me craving all of the light dishes I can get my hands on! Fresh salads, fruits, and smoothies are on repeat around our house lately because the thought of turning my oven on just sounds like a bad idea! I love making recipes that I can have on hand to eat on throughout the week that are ready to go in the fridge for easy and healthy lunches! My peach and fennel chicken salad is my new favorite lunch that makes for a great sandwich or lettuce wrap any day of the week!

A healthy lifestyle is something I strive to have for myself and for my family. Along with staying active, I believe the main aspect of staying healthy starts with your diet! That's why making healthy swaps like MaraNatha Almond Butters perfect for healthy snacking and recipe additions to any meal makes staying on track even easier. I love that I can shop at my local Walmart and get all of the ingredients that I need to create a delicious and healthy meal that my whole family will love! My almond butter Asian chicken and veggie soba noodle salad is the perfect lunch to meal prep and enjoy all week long!
My weekly routine has been out of whack the past couple of weeks. My gym days have been off, my diet has been decent but not great, and the reality is...that's just life sometimes. This week is the first week in a while that I feel like will be back to normal "ish" again and one thing that is going to help me stay on track is meal prepping my lunches! This means that I won't find myself eating junk and I will have a nutritious meal ready to go whenever I get hungry! My healthy curried chickpea salad is just the kind of recipe that is perfect to meal prep at the beginning of the week!
I'm here to let you know that I am extending the weekend another day! And yes I have the authority to do that. This weekend went by too fast, which it always does, but this weekend really sped by and I am just not ready to go into full on weekday mode today! So today I am challenging myself and you to do one thing for yourself that you wouldn't normally allow yourself to do today. Self-care Monday should totally be a thing if you ask me! Take a bubble bath in the middle of the day, read a book for a little while, take a power nap, whatever it is..do it! I need that today, and I am guessing so do you! And you know what else we need today? A little comfort food, so let's make ourselves a spinach and artichoke grilled cheese and call it a day!
I hope by now you have your whole menu worked out and are beginning phase one of prepping all of your Thanksgiving dishes to get ahead of the game! Because when Thanksgiving is over and the next day rolls around and you have a container of leftover turkey in your fridge and are wondering what to do with it, wonder no more my friend. From here on out, year after year, you are only going to want to make my turkey pomegranate salad to make the most delicious leftover turkey sandwiches that you have ever tasted...ever.
I have been slacking in the meal prepping department for Parks. I was so on my game at the beginning of the solid food stage and then he got really mobile and I found it super hard to find the time to go pee, let alone fix his homemade meals. Since we entered the can't sit still stage, I won't lie...there has been a hot dog or two thrown into the mix and maybe some mac and cheese...because some days I just need to get food in a hungry and fussy baby's belly and I need fast and easy. Yesterday however, I meal prepped for Parks because my mama guilt of not getting as many nutrients in him each day as possible was weighing heavy on me! Originally I made this dish for just him, and then after tasting the lentils I decided we would be sharing these lentils for a healthy lunch option all week!
