December is just a few days away and I am in full on holiday mindset already! There is something that happens to my brain right after Thanksgiving and I suddenly just want to bake holiday treats, watch Christmas movies, and sit by the tree sipping hot cocoa all day everyday! I know that this is very unrealistic and work has to be done, along with mom duties, and other responsibilities, but I always have to try extra hard to be focused in the month of December! I seriously cannot believe that Halloween is next week and then October will be over! This year is passing at a incredibly fast pace and while I am totally ready to put up my Christmas tree (ha), I also don’t want to rush these last months of the year! It finally feels somewhat like fall here in Texas, which at least makes me feel like it could be Halloween next week, and I am definitely embracing a little chill in the air! The weather has had me in a baking mood all week long and since the hubby’s favorite sweet treat is a cupcake, I made some scrumptious pumpkin cupcakes that needed to be shared with you! My pumpkin cupcakes with spiced cream cheese frosting are going to be on repeat in your kitchen all season long!
My best friend lives in New York and there is this cookie place called Schmakary’s that has this oatmeal scotchie that is just to die for! Every time we visit, I have to go get one, and you will have to do the same when you go! It’s perfectly chewy, and the best combination of flavors and because I love butterscotch, there have been few cookies to ever top it for me! I don’t know why it has taken me so long to try and recreate a healthier version at home, but the good news is, I finally did it! My healthier oatmeal scotchies are perfect for after school treats, or just to have around when you sweet tooth comes knocking!
It has been raining since Sunday and the sun finallllyyyyyy came out yesterday evening for the first day of summer! Summertime means it's officially ice cream season, even though I kind of feel like ice cream should be enjoyed all year long! Who's with me? Speaking of ice cream, when we were in Hawaii we ate at an amazing gelato spot (two nights in a row) and had a seriously delicious toasted coconut flavor that I haven't been able to get out of my head since we returned! Naturally, I had to recreate this flavor at home and the result was amazing! My chocolate coated toasted coconut ice cream might have just earned a spot as my most favorite ice cream I've ever made!
As we were driving back from Louisiana over the weekend, we stopped at a gas station and my hubby came back to the car with a pack of Almond Joys. They are 100% his favorite candy bar and so after I rolled my eyes at him (because my sweet tooth can't be stopped when candy is present) we all split that Almond Joy and I have to admit, it tasted amazing. But as I was eating it I was thinking about how simple it would be to make that same candy bar right in my own kitchen with minimal ingredients that aren't terrible for us to enjoy and then I wouldn't have to feel any guilt about satisfying my chocolate craving!
